Rouxbdoo says to use enough water to "nearly cover the chicken"; the third photo caption says "Cover with stock". <br /><br />I've been making stewed chicken for quite a while & that's how I do it too. You want a lot of liquid so you'll have plenty of gravy. If the gravy seems too thin at the end of cooking, thicken it with a little flour & water slurry.
